Let me show you how you can make these Kulchas having the tandoor effect at home.Ingredients for the Rotis: 3 cups Maida1/2 tsp Baking Soda1 tbsp OilSalt to tasteButter Milk to kneadFor the Stuffing:4 large boiled Potatoes1 tbsp crushed Coriander seeds1/2 tsp Turmeric3 chopped Green Chillies1/2 tsp Amchur (Mango powder)Salt to taste1/2 tsp Red Chilli powder1/2 tsp Garam masalaFor the topping:Kalonji (Nigella seeds)Coriander leavesAjwainButterMethod: In a bowl take Flour, Baking Soda and Salt and mix well. Add Butter Milk little by little and knead into soft dough. Also, add 1 tbsp Oil and continue kneading till it becomes really soft. Cover and keep aside for 30 minutes.To make the stuffing, mash the boiled Potatoes and add crushed Coriander seeds, Garam masala, Turmeric powder, Salt, Amchur, chopped Green Chillies, Red Chilli powder and Coriander leaves and mix well. Take equal parts of the dough and stuffing to make the Kulchas. Roll out the dough partially, keep the stuffing in the centre and bring the edges together and seal it. On one side sprinkle little Kalonji, Ajwain seeds and Coriander leaves. Roll out into thick Rotis. Cook the Kulchas till golden on both sides. Then put on open flame to give the Tandoor look.
