It is easy-to-prepare and makes use of everyday ingredients, but this dish has a magical and universal appeal. It is sure to be loved by all! Some sliced onions and Nimbu Ka Achaar makes a fitting accompaniment to Aloo ki Sukhi Subzi with puris or rotis.Preparation Time: 15 minutes. Cooking Time: 3 minutes. Serves 3. 2 cups boiled and peeled potato cubes1 tbsp oil1 tsp cumin seeds (jeera)3 to 4 curry leaves (kadi patta)¼ tsp turmeric powder (haldi)1 tsp chilli powder1½ tsp coriander-cumin seeds (dhania-jeera) powder1 tbsp sugar2 tsp lemon juiceSalt to taste2 tbsp finely chopped coriander (dhania)1. Heat the oil in a deep non-stick pan, add the cumin seeds and curry leaves and sauté on a medium flame for 30 seconds.2. Add all the remaining ingredients, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.Serve hot.
