Aloo ki Sukhi Subzi

When you need something quick and easy to serve with your rotis or puris , there is no better choice than this homely Aloo ki Sukhi Subzi. If you have got boiled potatoes on hand, it won’t take you more than five minutes to conjure up this ever-popular potato subzi. It is easy-to-prepare and makes use of everyday ingredients, but this dish has a magical and universal appeal. It is sure to be loved by all! Some sliced onions and Nimbu Ka Achaar makes a fitting accompaniment to Aloo ki Sukhi Subzi with puris or rotis.

Preparation Time: 15 minutes. Cooking Time: 3 minutes. Serves 3.

2 cups boiled and peeled potato cubes
1 tbsp oil
1 tsp cumin seeds (jeera)
3 to 4 curry leaves (kadi patta)
¼ tsp turmeric powder (haldi)
1 tsp chilli powder
1½ tsp coriander-cumin seeds (dhania-jeera) powder
1 tbsp sugar
2 tsp lemon juice
Salt to taste
2 tbsp finely chopped coriander (dhania)

1. Heat the oil in a deep non-stick pan, add the cumin seeds and curry leaves and sauté on a medium flame for 30 seconds.
2. Add all the remaining ingredients, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
Serve hot.
