Aloo & drumstick leaves is an excellent and popular combination. They can be added to curries, stews etc. Potato is a versatile ingredient and taste good when added to tender leaves of drumstick cooked with spices gives a brilliant aroma, makes it a flavourful curry with scrumptious thick gravy. This curry goes well with chapati, roti, naan or rice.

Ingredients:
Potatoes (boiled and cut into cubes) - ¼ kgs
Green leaves of drumsticks - 1 cup
Mustard seeds - 1 tsp
Cumin seeds - ½ tsp
Urad dal - 1 tsp
Garlic, chopped - 1 tbsp
Onion, chopped - 1 no
Salt - to taste
Turmeric pd - ¼ tsp
Coriander pd - ½ tsp
Chilli pd - 1 ½ tsp
Green leaves of drumstick - 1 cup
Tomato puree - 1 tbsp
Method:
Add little oil in a pan. When the oil gets hot, add mustard seeds and when they crackle, add in some cumin seeds, urad dal and fry a little till they get slightly browned. Add some finely chopped garlic, onions and salt to taste. This helps in sweating out the onions and cook faster. Once the onions get slightly brown, add turmeric powder, coriander powder, red chilli powder and the green leaves of drumstick. Fry the greens well until they get nicely dried and cooked. Add a little tomato puree and fry well. Finally add boiled and cubed potatoes and sauté well. Cover and cook for a few minutes. Once done, remove and serve with roti, chapati or rice.
