A new and interesting version like your Papeta par Eeda, instead of potatoes we've used aloo bhuiya to turn this omelette extraordinary.ALOO BHUJIA OMELETTEIngredients1 cup aloo bhujia8 eggsSalt to taste2 tbsps oil4 tsps finely chopped ginger2-3 green chillies, chopped1 large onion, finely chopped1 large tomato, finely chopped4 pinches of turmeric powder2 tsps red chilli powder1 tsp cumin powder2 tsps coriander powder4 tbsps chopped fresh coriander leavesToasted white bread slices to serveTomato ketchup to serveMethod1. To make one portion, break in 2 eggs in a bowl. Add salt and whisk well.2. Heat ½ tbsp oil in a non-stick shallow pan. 3. Add 1 tsp ginger, some of the green chillies, ¼ chopped onion, ¼ chopped tomato and salt and mix well. Sauté for 1-2 minutes. 4. Add a pinch of turmeric powder, ½ tsp red chilli powder, ¼ tsp cumin powder, and ½ tsp coriander powder and mix well. Cook for 1-2 minutes.5. Add ¼ cup aloo bhujia and mix till well combined. Add 1 tbsp coriander leaves and mix.6. Pour the whisked eggs and spread the mixture evenly. Cook on medium heat for 2-3 minutes. Flip the omelette and cook the other side for 1-2 minutes. Fold in half and transfer on a serving plate.7. Serve hot with toasted bread slices and tomato ketchup.
