Quick and a great tiffin box recipe!ALOO BHINDIIngredients4 medium potatoes (aloo), peeled and cut into strips200 grams lady fingers (bhindi), stemmed and cut into 4 pieces vertically2 tbsps oil1 tsp cumin seeds½ tsp turmeric powderSalt to taste½ tsp Tata Sampann Red Chilli Powder1 tsp dried mango powder2 tbsps chopped fresh coriander + for garnishRotis for servingMethod1. Heat oil in a non-stick pan. Add cumin seeds and once they start to change the colour, add potatoes and sauté for a minute.2. Add turmeric powder, salt, Tata Sampann Red Chilli Powder and mix well. Cover and cook for 6-8 minutes or till the potatoes are ¾ cooked.3. Add bhindi and dried mango powder and toss well. Cover and cook for 8-10 minutes. Add coriander leaves and mix well.4.
