ALOO BHARTA

Ingredients

2 medium potatoes, boiled and peeled
1½ tbsps oil
1 tsp cumin seeds
½ tbsp finely chopped garlic
1½ tsps finely chopped ginger
1-2 green chillies, chopped
3-4 spring onion bulbs, chopped
½ tsp turmeric powder
½ tsp red chilli powder
1½ tsps Tata Sampann Kitchen King Masala
2 tbsps freshly chopped coriander leaves
Salt to taste
½ tsp dried mango powder (amchur)
Chopped spring onion greens for garnish

Method

1. Heat oil in anon-stick pan, add cumin seeds and allow them to change colour.
2. Add garlic, ginger, green chillies and spring onion bulbs. Sauté well and cook for 1-2 minutes.
3. Add turmeric powder, red chilli powder, and Tata Sampann Kitchen King Masala. Sauté well. Cook for 1-2 minutes.
4. Grate the potatoes and add to the pan. Add ½ cup water and mix well. Cook for 1 minute.
5. Add chopped coriander, salt and amchur. Mix well and cook for 1 minute. Take it off the heat.
6. Garnish with spring onion greens and serve hot.
