Akhrot Halwa(Walnut Pudding). This absolutely mouthwatering winter sweet for walnut lovers is nutritious and tasty at the same time. This halwa is winter special as it keeps the body warm, improves immunity and protects from the bitter winter cold. Akhrot halwa has rich ingredients like Walnuts (akhrot), ghee, mawa and cashewnuts. Walnut contains high quantities of anti-oxidants and omega 3 that is good for our brain.

There are many types of Halwas like Gajar/Carrot Halwa, Suji/Semolina Halwa, Badam/Almond and the list is never-ending. In this video, I am making Akhrot Halwa
Ingredients:
3 cups walnuts Coarsely ground
1/3 cup Ghee
1 cup milk
1 cup sugar
1-2 tsp cardamom, ground - optional
Few strands of saffron - optional
Preparation:
In a microwave safe bowl or cup, boil the milk, saffron, cardamom and sugar. I set microwave for 2 minutes but may vary by brand and model.
Next,Heat the ghee in a heavy bottomed pan, add the coarsely ground walnut powder. Roast the powdered walnuts on medium heat until you get a roasted aroma and the walnuts get a good brown colour.

Once roasted, add the milk to the walnuts and while adding milk mixture, keep stirring the walnut halwa. You will notice that the halwa will start spitting and sputtering all over. Keep stirring continuously at this stage until all the milk has been absorbed and the Akhrot Ka Halwa leaves the sides of the pan. At this stage add the chopped walnuts, stir well to combine and turn off the heat.

The final halwa consistency should not be too thick. The Akhrot Ka Halwa tends to thicken and gets the right texture and consistency once it cools.

You can shape the Akhrot Ka Halwa by placing it in a square dish and cutting into shapes or serve it as it is. #bhavnaskitchen
