AKASHIYAKI | Fluffy Egg and Octopus Balls | Regional Street Food (EP280) | Kitchen Princess Bamboo

Today I'm going to be making, AKASHIYAKI.

AKASHIYAKI is a regional street food of Akashi-city located in between Kobe and Himeji.

The city faces out onto the sea and famous for its bounty of seafood such as octopus.

The octopi which can be caught in Akashi are famous all over Japan for their perfect springiness and softness.

I was born and raised around that area, and I grew up eating those fluffy egg balls.

It looks the same as Takoyaki, but it's totally different!

・about 30 balls
〈batter〉
400ml Dashi
60g all-purpose flour
60g wheat starch
3 large eggs
200g boiled octopus

※alternative for wheat starch
40g all-purpose flour + 20g cornstarch
or
40g all-purpose flour + 20g cornstarch

〈dipping soup〉
200ml Dashi
1~2 tablespoons light soy sauce (or regular soy sauce)

chopped scallion
