Agra petha sambhar vadiyam ashgourd | Vahchef - VahRehVah

AGRA PETHA SAMBAR VADIYAM ASH GOURD
INGREDIENTS:
Ash gourd - 1 no.
Water - As Required
Lime (Chuna) - 1 tsp
Sugar - 2 cup
Green chillies - 3 nos.
Cumin seeds - 1 tsp
Hing - ½ tsp
Black salt - ½ tsp
Curry leaves - 1 spring
Vada batter - 4 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Fenugreek seeds - 1 tsp
Red chillies - 5 nos
Onion - 1 no
Turmeric powder - ½ tsp
Tamarind juice - 1 cup
Tomato - 3 nos.
Red chilli powder - 1 tsp
Turmeric powder - ½ tsp
Sambar powder - 1 tsp
Coriander powder - 1 tsp
Tuvar dal (boiled) - 1 cup
Coriander leaves - 1 bunch
Jaggery - 1 tsp
DIRECTIONS:
Firstly, cut ash gourd into the big pieces.
Take water in a bowl, add limestone powder to water and ash gourd pieces soak it
overnight.
Take hot water in a pan, add soaked ash gourd pieces to it and boil it till they are soft and drain the water.
Heat in a pan, add sugar, water boiled it and make a sugar syrup and soak it overnight.
Remove them for sugar syrup and let them dry overnight.
To make Vadiyam:
Take ash gourd & cut into small pieces, add green chillies, cumin seeds, hing, black salt mix it well. Transfer into muslin cloth squeeze the water.
Then add curry leaves, vada batter & mix it well. Sun dry those papad for a day or two. Deep fry it in the hot oil. Transfer into a plate. Crunchy and tasty papad are ready.
To make sambar:
Heat oil in a pan,add mustard seeds, cumin seeds, fenugreek seeds, red chillies, onion, curry leaves, hing, turmeric powder, ash gourd,and water. Cook until they turn soft.
Then add tamarind juice, tomato, water, red chilli powder, sambar powder, coriander powder. Check salt and cook it for few minutes.
Now, add boiled toor dal, salt and let it cook with the lid closed on a slow flame.
In the last, add coriander leaves, jaggery cook it for some more time. Then switch off the flame.
Tasty Ash gourd Agra Petha Sambar and Vadium ready to serve.
