Afghani Rice with Kafta Kabab


Ingredients for Carrot Topping:
Carrots (julienne) 1 cup
Raisins 1/4 cup
Almonds (peeled) 1/4 cup
Cashew nuts 1/4 cup
Sugar 2 tbsp
Oil (for frying) 3 tbsp

Ingredients for Afghani Rice:
Water 4 cups
Onion (sliced) 1 cup
Rice (Soaked) 2 cups
Cumin seeds 1 tbsp
Oil (1/4 cup)
Salt 2 tsp or to taste
K&Ns Stok (cubes) 2
K&Ns Kafta Kabab (515 g) 24 or as required


Directions for Carrot Topping Preparation:
1. In a frying pan, heat oil and fry carrots for 2-3 mins. Then add sugar and when it melts, add raisins, almonds, cashew nuts and cook for 2-3 mins.
2. Fry K&Ns Kafta Kabab as per instructions on the pack. Set aside.


Directions for Afghani Rice Preparation:
1. In a pot, heat oil and add onion. Then fry until golden brown. Add cumin seeds and fry for a minute. Add salt along with water and K&Ns Stok, once the water starts to simmer, add rice and cook until 80% water has evaporated.
2. Fry K&Ns Kafta Kabab as per instructions on the pack.
3. Add the carrot topping and along with K&Ns Kafta Kabab.
4. Now cover and steam the rice over low flame for 10-15 mins. Your Rice is ready.
5. In a dish add rice and garnish it with carrot topping. Lastly, place K&Ns Kafta Kabab on top and sides.
6. Your Afghani Rice with Kafta Kabab is ready.
