Achari Mutton Recipe which traces its roots to Amritsar, a must-try for all the Mutton Gosht Pickle lovers; it has the capability to be become an instant party favorite, a recipe moving away from lollipops and paneer.

It has 2 steps.

Step 1: Achaari Masala: 1 tsp Cumin Seeds,1 tsp Mustard Seeds,1 tsp Onion Seeds,1 ½ tsp Fennel Seeds (Big), ½ tsp Fenugreek Seeds. Roast and grind together.

Step 2: Take ½ KG mutton and marinate with salt and turmeric for 30 minutes. Heat mustard oil in pan (50 ml), add Garlic Paste (1 tbsp), Red Chili Powder (1 tbsp) and Ginger Paste (1 tbsp) and saute for 2-3 minutes. Now add the marinated mutton in the pan and roast mutton on low-medium heat for 20 minutes. Stir continuously and add 1-2 tsps of water, to prevent it from burning.

Now add 1 cup water, salt, and pressure cook the roasted mutton for 15 minutes on low heat. Open and add onion tomato paste(150 gms onion lightly fried in mustard oil and ground, with 200 gms tomatoes-boiled) and cook for 5 more minutes, stirring occasionally. Now remove the cooker from heat and add half of the prepared Achaari Masala Powder to it.

Serve Hot.
