Achari Hummus With Ajwaini Lavash | Cooking Classy with Afraz | Sanjeev Kapoor Khazana

ACHARI HUMMUS WITH AJWAINI LAVASH

Ingredients

Achari hummus
1 cup chickpeas, soaked overnight and boiled
1½ tablespoons mango pickle masala
7-8 garlic cloves
1 tablespoon tahini
Juice of ½ lemon
Salt to taste
¼ cup + 2 tablespoons olive oil
Pickle oil for drizzling
1-2 black olives, pitted and sliced
Ajwaini lavash
1½ cups refined flour (maida) + for dusting
1 teaspoon carom seeds (ajwain)
½ tablespoon fresh yeast
1¼ teaspoons castor sugar
Salt to taste
1 teaspoon oil + for greasing

Method

1. To make ajwaini lavash, mix together yeast and ¼ teaspoon castor sugar with 1-2 tablespoons water in a bowl and heat in the microwave for 10 seconds. Remove from heat and mix.
2. Mix together flour, salt, remaining castor sugar and carom seeds in another bowl.
3. Make a well in the centre, add activated yeast, mix and knead into a soft dough with sufficient water.
4. Transfer the dough on the worktop and stretch with your hands. Add oil and knead again. Transfer the dough in a greased bowl, cover with a cling film and set aside to prove for 10-15 minutes.
5. Preheat oven to 180̊ C.
6. To make achari hummus, blend together chickpeas, garlic, tahini, pickle masala, lemon juice, salt and olive oil to a smooth paste. Set aside.
7. Dust the worktop with some flour, place the dough on it and knock back to release the excess air.
8. Divide the dough into 2 large portions and roll out each into a thin sheet. Prick the sheets all over with a fork, trim the edges and cut into large triangles.
9. Grease a baking tray with some oil, dust with some flour and transfer the triangles on it. Put the tray in the preheated oven and bake for 8-10 minutes.
10. Transfer the achari hummus in a jar, drizzle some pickle oil, garnish with olives and serve with ajwaini lavash.
