Achari Gobhi Recipe - Cauliflower In Pickled Sauce | Nisha Madhulika

Ingredients
Cauliflower - 500 grams
Mustard oil - 2-3 tbsp
Green coriander - 2-3 tbsp (finely chopped)
Green chilly - 2 (finely chopped)
Ginger - 1 inch piece (grated)
Asafoetida - 1 pinch
Cumin seeds - 1/2 tsp
Mustard seed - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Turmeric powder - 1/4 tsp
Red chilly powder - 1/4 tsp
Garam masala - 1/4 tsp
Coriander powder - 1 tsp
Fennel powder - 1 tsp
Mango powder - 1/2 tsp
Salt - 1 tsp or as per taste

Directions
Getting ready:
1.Cut off the stalk from cauliflower and make small to medium size florets from it.
2.Blanch these florets in warm water with some salt for 5 minutes and wash them thoroughly.
3.This helps remove impurities from the florets.
4.Now coarsely grind fenugreek leaves, cumin seeds and mustard seeds in a mixture jar.

Making:
5.Heat some oil in a pan or wok and add coarsely grind spices and asafoetida into it. Stir and sauté for few minutes and then add chopped green chilies, ginger paste, turmeric powder, florets, salt, red chilly powder and coriander powder. Mix everything really well.
6.Stir and continue stirring for 2 to 3 minutes and then add 2 to 3 tbsp water to the sabzi. Now cover and let it simmer on low flame for 4 to 5 minutes. Check later.
7.Open the lid and stir the sabzi. It’s still not cooked, so cover again and cook for 4 more minutes until soft.
8.Sabzi is now ready, add mango powder, garam masala powder and green coriander in the sabzi. Give it a nice stir and mix well.
9.Super delicious and tangy achari gobi is ready.

Serving:
10.Transfer it to another bowl and garnish with some coriander sprigs. Serve steaming hot with any Indian bread like chapatti, parantha, naan or poori and relish eating.
