Method of Preparation
Take a thick bottomed Pan heat 2 Tbs Oil.
Add 2 Tbs of Bengal Gram, Black Gram each fry until a change in color.
Add 2 Tps of Mustard Seeds & a Tsp of Cumin Seeds, let them splutter.
Then, add 2 Tbs of finely grated Ginger fry for a while, on low flame.
add 7 to 8 finely chopped Green Chilies.
Add 2 Shoots of chopped Curry Leaves fry them/roast them all till dry and crisp.
Add 1/4 Cup of chopped Coriander Leaves and 1 Kg of Semolina (Upma/Bombay Rava).
Roast it well on low flame till 10 Min.
Add 2 1/2 Tsp of Salt, which can be adjusted according to our taste when we cook the recipes.
Let it cool down completely, can be stored for a month in an air-tight container.
If refrigerated can be stored for 3 months.
4 to 5 recipes can be prepared with this single pre-mix.
Now, will prepare Idli with the Pre-Mix.
To a mixing bowl add 1 cup of pre-mix and a cup of curd, mix well.
Let it rest for 15 to 20 Min, add some water and 1/4 Tsp of Soda.
Add salt if required, mix them all the batter consistency should be thick required for Idli.
grease the Idli molds, pour a glass of water into the cooker/steamer place the stand.
Cook it for 10 Min on High Flame and 10 Min on Low flame, after 5 Min open the lid.
Soft and Spongy Idli's are ready, serve hot with Chutney of your choice.
Now, I Will go ahead with Mini-Dosa.
To a mixing bowl add 1cup of Pre-Mix, & Rice Flour, and Curd of each.
Mix them well with some water if needed till we get Dosa Batter consistency.
More water can be added to try a Rava Dosa with the same.
Add 1 finely chopped Onion, & 1/4 cup of grated Carrot.
Any veggies of choice can be added.
Let the batter sit for 15 Min.
With a single ladle of batter shape the mini dosa on a pan.
Add some Oil, place a lid, and cook for a while.
Flip turn cook for 2 more min, Mini Dosa is ready.
Now, with the same batter will make Guntha Ponganalu.
Grease the Mold with some Oil, pour the batter mixture.
Cook it for 5 to 6 Min with a lid on it.
Flip turn them all cook for 2 more min, Gunta Ponganalu is ready.
Now, will prepare Punugulu to add 2 Tbs of White Flour.
Add coriander if you wish to, adjust salt as per our taste.
Mix them well, heat oil for deep frying in a pan.
Drop the batter deep fry them, flip turn them fry until golden brown.
Crispy Punugulu is ready.
Now, comes the turn of Upma.
To a cup of Pre-Mix take double the amount of water.
Boil the water add veggies like Carrots, Beans, Onions if we wish to.
To the boiling water add pre-mix, ix it well cook for a while with a lid.
Stir it often, add a dollop pf ghee as it enhances the taste.
Tasty Upma is ready.
