5KG (11lb) UNDEFEATED Mazesoba Challenge! Giant Japanese Ramen Eating Challenge!

For this episode, we went down to Ramen Matsuri at Boat Quay to destroy an UNDEFEATED 5KG Mazesoba Challenge! Mazesoba is a Taiwanese-inspired dish originating in Japan that is akin to a Singaporean Bak Chor Mee. It is a dry ramen, usually consisting of a light sauce base and wheat noodles with ground pork, an egg yolk, spring onions and chives placed on top. You then mix it all together to create a sumptuous mixture of sweet and savoury flavours. Ramen Matsuri specialises in Nagoya-style Mazesoba ($12.80 for a standard portion) and offered us an undefeated 5KG bowl for Zermatt to attempt.

Their bowl was simple and straightforward, coming with the usual toppings but with seaweed and lightly poached whole eggs instead of egg yolks. We requested non-traditional char siew and karage to round off the 5KG bowl of Mazesoba. Despite a heavy dose of soya sauce and sesame oil, the Mazesoba was not overpoweringly cloying. The eggs helped to create a creamy texture and coated the al dente noodles nicely. The greens provided a crunch and herbal quality to counterbalance the strong umami notes. The minced pork was stewed in some sort of sweet teriyaki-style sauce that brought a needed sweet element to the multitude of flavours encompassing the bowl.

As always, for a single bowl (or two), Ramen Matsuris Nagoya-style Mazesoba would be a light and enjoyable lunch treat. As a 5KG Challenge, it was a decent struggle but Zermatt managed to do it 24 minutes. The owners are from Nagoya in Japan and it shows in the quality and craftsmanship of their Mazesoba. There is also a Gyoza Bar on the 2nd level where you can snack and drink to your fill. Do head down to Ramen Matsuri to try an authentic take of Mazesoba!
