The 50/50 burger is one you must try. I grill this on an indoor grill pan. If you want to know where to get this grill pan, you can get info on my website http://www.cooking-mexican-recipes.com/mexican-online-store.html under pots and pans.

Here are some tips for making this 50/50 burger.
1. Use a nice flavored bacon. I used applewood smoked.
2. Cook this burger through so there is no red.
3. Freeze the bacon so it's easier to work with. If you have a meat grinder, use it. If not the frozen bacon will chop up nicely while frozen.
4. If you are using an indoor grill pan like I used, place a lid over your burger. This will simulate cooking it on the bbq.
5. Make the avocado mash last so the avocado doesn't turn brown. You can cover it with plastic wrap while you are waiting to plate it up.

50/50 Burger
Ingredients:
4 oz. lean ground beef
4 oz. applewood smoked bacon, frozen
pepper jack cheese
avocado
salt
sliced tomato

Chipotle Mayo
Ingredients:
1 cup mayonnaise
1 Tbsp. or more chipotle peppers in adobo sauce, seeds removed, diced
1 tsp adobo sauce
1/2 tsp honey
4 tsp. fresh lime juice
1/8 tsp. garlic powder

If you don't have a meat grinder then chop the frozen bacon into tiny pieces and combine with the ground beef.

Heat the grill pan or bbq and cook the burgers over medium heat 6 to 7 minutes per side. With 1 minute of cooking to go, place the pepper jack cheese on the burger.

Mix the chipotle mayo while the burgers are cooking. Mix all the chipotle mayo ingredients in a bowl and set aside until needed.

Mash 1 or more avocado in a bowl and add salt to taste. Do this at the last moment so the avocado doesn't have a chance to turn brown.

Don't forget to toast the buns on the grill pan or bbq if desired.

Place some chipotle mayo on the bottom bun and add the meat. Then top with avocado mash and a slice of tomato and more sauce if you like.

Enjoy!
