For Tomato Chutney -
Dry Red Chilli – 3no
Cumin – 2tsp
Chana dal – 1tbsp
Urad dal – 1tbsp
Coconut grated – 1cup
Ginger chopped – 2tsp
Green chilli chopped – 1no
Curry Leaves – a handful
Water – a dash
Oil – ¼ cup + 2tbsp
Heeng (asafoetida) – ½ tsp
Kashmiri Chilli powder – 2tsp
Coriander powder – 1tbsp
Salt – to taste
Tomato chopped – ½ cup
Tomato Puree (fresh) – 1cup
Jaggery – 2tbsp
Curry leaves – a handful

Hare Pyaz Ki Chutney -
Spring onion chopped - 2 cups
Mint - ½ cup
Coriander - ½ cup
Green chilli - 1no
Ginger chopped - 2tsp
Black salt - ¾ tsp
Salt - to taste
Chaat masala - 2 tsp
Lemon - 1no
Curd (thick) - ½ cup
Ice Cubes - few
Water - a dash

For Peri Peri Sauce/Marinade -
Kashmiri Dried Red chillies - 15nos
Water - 1lt
Ginger (roughly cut) - 1½ tbsp
Garlic cloves - 6-7nos
Cumin - 1½ tsp
Cloves 3-4nos
Cinnamon (2” long) - 1 no
Salt - ¾ tsp
Lemon juice - ¼ cup
Tomato ketchup - ⅓ cup
Oil - ¼ cup

For Curd & Cucumber Dip -
Cucumber (finely chopped) - 1no
Mint leaves chopped - handful
Curd - 1 cup
Garlic chopped - ¼ tsp
Mayonnaise - ¼ cup
Salt - to tast
Black pepper powder - to taste
